
Last week, Balazs was working late most nights, so that's usually my cue for digging into my solo-eating-nights-in folder. I take those occasions as a way to really indulge in the simplest way possible, by cooking something I wouldn't normally eat for dinner and devour it in front of the telly with my feet up! So, I made this apple pie toast that besides being ridiculously easy to make, it also tastes incredibly soothing and somewhat naughty:) It's almost like a dessert that is too good to share with others.
So if, by any chance, you're feeling rebellious, make this happen tonight...
Peel and slice up 6 Granny Smiths or Honeycrisps. Toss them with half cup of sugar, 1 tablespoon of cornstarch and half teaspoon of ground cinnamon. Put it into the oven on 350° until they look soft and jammy, like apple pie filling, 20 - 30 minutes. Then take a slice of really good bread and spread a thick layer of really good unsalted butter on it, followed by a generous serving of this amazing apple preserve on top. Ta dah!
